Recipe

French Onion Soup

Portion Size: 8 oz. serving; Servings: 4 each

Ingredients

  • White Onions, sliced thinly - 32 oz or 3 each
  • Olive Oil - ½ oz
  • Beef Broth (low Sodium) - 50 oz
  • Fresh Thyme - 3 oz
  • French Bread - 8 slices (¼ inch thick)
  • Provolone Cheese slices - 4 oz (more if you like)
  • Salt & Pepper - To Taste

Method

  1. In a hot stock pot or sauce pan add oil and then add thinly sliced onions. Sweat until translucent, making sure not to color the onions.
  2. Add thyme and mix evenly with the onions. Add beef broth and bring to a boil; reduce to a simmer for at least 45 minutes.
  3. Check the seasoning of the soup and if necessary, add salt and pepper to taste.

To Serve

  1. Pre-heat Broiler
  2. Place broth in a bowl along with onions then place a slice of French bread on top of the broth and add a few layers of Provolone Cheese.
  3. Place bowls in oven under broiler and melt cheese until it turns slightly brown.
  4. Serve and enjoy.
