What inspires you from WFSU Public Media? Here's this week's Voices That Inspire. I'm Jesse Edmonds. I'm the owner of Seven Hills Hospitality Group who we have several different restaurants all across Tallahassee and mostly concentrated in Midtown. The idea of being a part of a community is what makes a place sustain. Every restaurant in Tallahassee has salt. Every restaurant in Tallahassee has chicken. Everyone has celery. Like it's what you do with it that makes it special. It's the feeling that you try to give to people. It's a lot of building these different restaurants, keep my growth going, explore different things, provide jobs, bring a unique space to Tallahassee to enhance a talent that has come through our doors. I mean, there's just a million motivations behind it. The thing that really gets me going is the camaraderie, the sense of camaraderie in hospitality. Our nomenclature is the same no matter where you go. I could be in Chicago, I could be in New York, I could be in Texas, I can go to Europe and our nomenclature is the same. Our values are very similar and it's almost universal. It makes you feel like you're part of something much bigger. Chef Ed Lee said at the best that cooking is one of the most zen professions that you could ever have. You pour your entire life, your hours, your life into creating a dish that is gone in minutes. And that's it. All you have is a memory, maybe a picture on Instagram. But the number of people that took to create that dish, the farmers, the distributors, the fabricators, the cooks, the years that it took to put one dish on a table in front of you. I don't think people understand the gravity of that. For it to just be gone in 10 minutes and you get a four star review. And it's like to wake up every day and still want to do that.
