What inspires you from WFSU Public Media? Here's this week's Voices That Inspire. Byron Burrows, founder, proof brewing company. Proof we originally started out as retailers back in 2007. Proof as a brewery was founded in 2012. We then opened up our first production facility in 2014. We thought we'd be there for about 10 years. We outgrew it in about two and a half and started planning again to what is now the newest. And hopefully the longest lasting iteration of a proof brewing company. The building being originally built in 1948 and being this blighted structure that had been abandoned for decades, to go and be able to breathe life back into an old building and not only bring something too telehassy and to that side of time that is new in modern production expansion, as well as a hospitality space that then suddenly can bring thousands of people down there. And a lot of thousands of people down to a part of town that they might not have been hanging out in is an incredible experience. And to see that that's working and that the community is receiving it as a whole is incredible. One of the main goals that we had within this new project was to be as socially responsible and as environmentally responsible as we can within our processes. All of our spent grain goes to local farmers. We're getting ready to start a composting project with our spent hops. We're really about what we leave behind, not only for my daughter's future, but everyone's sons and daughters. From a charitable level, we feel that it's extremely important to affect change on a local level and affect your community where you can really touch it. And we've always had this ideal that we try and benefit those most in need. We typically use our charitable proceeds to benefit needy families and children veterans who have helped protect our country. And now trying to do more environmental ideals like what we're doing with Fish and Wildlife and hoping to expand along that. Byron Burrows, founder, proof brewing company.
